La frittata di tarassaco è un’idea gustosa da proporre come secondo piatto o come antipasto. Ricetta semplicissima, vera delizia di primavera, risulta anche gradevole d’aspetto grazie alla presenza delle foglie dentellate di questa versatile erba spontanea.
INGREDIENTI
6 uova
1 cespo di tarassaco
40 g di pecorino grattugiato
latte
una noce di burro
sale
pepe nero (facoltativo)
1 spicchio di aglio
La frittata di tarassaco è un delizioso esempio di cucina con le erbe spontanee. Una ricetta semplice, ma particolare grazie proprio alla presenza del tarassaco e del suo sapore unico, lievemente amarognolo.
Ad accompagnare il tarassaco appena scottato e ripassato in pochissimo burro, un composto d’uova e formaggio pecorino, sostituibile con Parmigiano Reggiano o Grana Padano se preferite un sentore più lieve. La frittata così preparata, è un ottimo secondo piatto o antipasto.
COME PREPARARE: FRITTATA DI TARASSACO

Per preparare la frittata di tarassaco iniziate a pulire la verdura eliminando la parte finale del gambo, più dura. Sciacquate bene le foglie di tarassaco sotto il getto dell’acqua corrente quindi scottatele per 3-4 minuti in acqua bollente leggermente salata, in modo che si ammorbidiscano rimanendo croccanti e di un bel verde brillante. Scolatele.

Nel frattempo sbattete in una ciotola le uova con il formaggio grattugiato, un po’ di latte e una macinata di pepe, se gradito. Fate scaldare molto bene una padella antiaderente, scioglietevi una noce di burro con l’aglio: quando si sarà leggermente dorato toglietelo e unite il tarassaco.

Versateci sopra il composto di uova e fate cuocere con il coperchio, abbassando poi la fiamma, fino a quando la frittata di tarassaco risulterà cotta e ben gonfia. Trasferitela sul piatto da portata e servite subito.
